• 4 new potatoes, cut in 1/4-inch slices

• 1 tablespoon finely chopped fresh sage or 1 teaspoon dried sage
• 1 tablespoon finely chopped fresh tarragon or 1 teaspoon dried tarragon
• 3 sweet red bell peppers, seeded and diced
• 1 onion, thinly sliced
• 1/2 cup uncooked long-grain rice
• 3 medium zucchini, thinly sliced
• 4 medium tomatoes, sliced
• 1 cup (4 ounces) shredded Swiss cheese
