We skipped the cream on top to let the tropical custard filling be the star.

Ingredients

  • 1 can (14 ounces) coconut milk
  • 1 cup whole milk
  • 1 recipe , rolled and fitted into a 9-inch pie plate Basic Pie Crust
  • 1/2 cup sugar
  • 1/2 cup sweetened shredded coconut, toasted
  • 1/3 cup cornstarch
  • 1/4 teaspoon salt
  • 4 large egg yolks
