  • 2 tablespoons all-purpose flour
  • 1 cup confectioners' sugar
  • 6 large egg whites, room temperature
  • Pinch of cream of tartar
  • 2/3 cup superfine sugar
  • 1/4 teaspoon pure vanilla extract
  • 1 large ripe pineapple (about 4 3/4 pounds), peeled, halved, cored, and cut into 1/4-inch-thick slices
  • 2 cups pineapple juice, plus more if needed
  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon coarse salt
  • 3/4 cup granulated sugar
  • 1/2 cup corn syrup
  • 2 tablespoons water
  • 6 large egg yolks
  • 12 ounces (3 sticks) unsalted butter, softened
  • Vegetable oil, cooking spray
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh pineapple juice
  • 3 ounces blanched sliced almonds (1 cup)
