INGREDIENTS
- 2 1/2 cups sliced leeks (about 1 1/2 pounds whole leeks), white and light-green parts only
- 1 teaspoon olive oil
- 2 medium green tomatoes (about 9 ounces), cut into 1/2-inch dice
- 1 1/2 teaspoons salt
- 1/4 teaspoon freshly ground pepper
- 4 large eggs
- 2 tablespoons freshly grated Parmesan cheese
- 1/2 cup fresh basil leaves, torn into small pieces
- 2 large egg whites
- 1 teaspoon unsalted butter
