DESCRIPTION
Short ribs, also called flanken, make their own rich, delicious sauce as they cook. The meat should be soft and melting when done.
INGREDIENTS
- 3/4 cup all-purpose flour
- 8 beef short ribs (about 6 pounds)
- Coarse salt and freshly ground pepper
- 2 tablespoons chicken fat or olive oil
- 3 1/2 tablespoons finely chopped fresh rosemary, plus more for garnish
- 2 large onions, cut into 1/2-inch pieces
- 2 large carrots, cut into 1/2-inch pieces
- 2 stalks celery, cut into 1/2-inch pieces
- 1 1/2 cups dry red wine
- 2 cups homemade or low-sodium canned beef stock, or water
- 1 teaspoon Worcestershire sauce
- Freshly grated or prepared horseradish, for serving (optional)
