- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 cups granulated sugar
- 4 large eggs
- Finely grated zest of 1 lemon, (about 1 tablespoon)
- 1 teaspoon pure vanilla extract
- 1 cup low-fat buttermilk
- 10 ounces seedless raspberry jam, (1 cup)
- 1 cup heavy cream
- 3 tablespoons confectioners' sugar
