INGREDIENTS

  • 3 1/2 pounds large plums (10 to 12), ripe but firm
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 6 sheets phyllo dough (18 1/4 by 11 1/2 inches), thawed according to package instructions
  • 6 tablespoons unsalted butter, melted
  • 1/3 cup unsalted pistachios, shelled, finely chopped
