DESCRIPTION

Our coconut cookies are a cross between a coconut macaroon and a chewy butter cookie. Using a food processor makes the dough a snap to prepare.



INGREDIENTS

  • 2 cups (4 sticks) unsalted butter, cut into small pieces, room temperature
  • 1 1/4 cups granulated sugar
  • 1 1/2 cups packed light-brown sugar
  • 2 large eggs, lightly beaten
  • 2 3/4 cups plus 4 teaspoons all-purpose flour
  • 2 teaspoons baking soda
  • Pinch of fine sea salt
  • 8 cups coconut chips
