DESCRIPTION

When refrigerating pie, cover first with a paper towel, then plastic wrap. The towel absorbs moisture and keeps the surface free of droplets.

  • All-purpose flour, for dusting
  • Pate Brisee
  • 3 large whole eggs
  • 1 1/2 cups canned or fresh pumpkin puree
  • 3/4 cup packed light-brown sugar
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly grated nutmeg
  • 1 1/2 cups canned evaporated milk
