DESCRIPTION

The beauty of icebox cookies is that the dough keeps for up to a month, if tightly wrapped in the freezer, so you can have cookies anytime at a moment's notice. If you're baking them for use today, prepare a double batch and freeze half the dough for late



INGREDIENTS

  • 3/4 cup dried sour cherries
  • 1/3 cup sour cherry jam, or preserves
  • 1 tablespoon sugar
  • 1/8 teaspoon almond extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 tablespoons (1 stick) unsalted butter, room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
