DESCRIPTION
This homemade vegetable stock from chef Sam Beall's "The Blackberry Farm Cookbook" is used to make his 10-Hour Braised Lamb.
INGREDIENTS
- 3 tablespoons olive oil
- 1 large onion, half coarsely chopped and half left whole
- 2 large ribs celery, cut into 1/2-inch pieces
- 2 medium carrots, cut into 1/2-inch pieces
- 2 cloves garlic, thinly sliced
- 8 sprigs fresh flat-leaf parsley
- 8 sprigs fresh basil
- 4 sprigs fresh thyme
- 1 bay leaf
- 1/4 teaspoon whole black peppercorns
- Coarse salt and freshly ground black pepper
