  • 1/2 cup whole milk, hot
  • 1/2 stick unsalted butter, divided
  • Coarse salt and freshly ground pepper
  • 1 1/2 pounds boneless pork loin, cut into 1 1/4-inch pieces
  • 2 shallots, thinly sliced crosswise (about 1/3 cup)
  • 5 sprigs thyme
  • 2 Bartlett pears (about 1 pound), cut into 1/2-inch pieces
  • 1/3 cup cider vinegar
  • 1/2 cup chicken broth or water
