INGREDIENTS
- 5 tablespoons unsalted butter, room temperature
- 1 tablespoon finely chopped shallot
- 1/2 cup all-purpose flour
- 1 1/2 cups milk
- 1/2 cup plus 2 tablespoons (2 1/2 ounces) finely grated Gruyere cheese
- Coarse salt and freshly ground pepper
- 4 slices country bread, toasted (each 1/2 inch thick)
- 2 small tomatoes, sliced 1/4 inch thick
