My husband was born on St. Patrick's Day, and this is the special meal I make to celebrate that occasion. My family looks forward to it all year.
INGREDIENTS
- 1 pound carrots, cut into 2-1/2 inch pieces
- 2 medium onions, chopped
- 3 tablespoons vegetable oil
- 3 tablespoons King Arthur Unbleached All-Purpose Flour
- Salt and pepper to taste
- 1-1/2 pounds boneless beef chuck steak, cut into 1-inch strips
- 1/2 teaspoon chopped fresh basil
- 2/3 cup Guinness, other dark beer or beef broth
- 1 teaspoon honey
- 2/3 cup additional beef broth
- Mashed potatoes or boiled potatoes
