- 1 egg, lightly beaten
- ½ cup grated Parmesan cheese
- 2 plum tomatoes (or 1 large heirloom tomato), cored and sliced ¼-inch thick
- ½ teaspoon salt
- 4 ounces mozzarella cheese, shredded (about 1 cup shredded)
- 2 tablespoons olive oil
- 1 garlic clove, minced
- 2 tablespoons minced fresh basil
