INGREDIENTS
- 70 grams almond flour
- 50 grams pistachio flour
- 125 grams egg whites (approx. 3-4 large egg whites, aged at least 1 day, covered, room temp)
- 200 grams confectioners sugar
- 30g caster sugar (if you don't have this, grind up granulated sugar till it's super fine)
- You will also need:
- 2 backing sheets, stacked
- parchment or silpat to line one sheet
- Large mesh strainer
- Pastry bag and 1cm round piping tip
- Food processor
- Hand mixer or stand mixer with whisk attachment
- green and yellow gel food coloring
