Bourbon-Infused Peaches with Crème Anglaise

INGREDIENTS

• 1 cup simple syrup (see related recipe at left)
• 1/2 cup bourbon
• 8 fresh basil leaves
• 4 peaches, cut in half and pits removed
• 5 egg yolks
• 1 cup milk
• 1 cup heavy cream
• 3/8 cup sugar
• 1 vanilla bean, split, seeds scraped, and seeds and pod reserved
• Pinch of salt
