  • 2 pork tenderloins, each about 3/4 lb., trimmed of excess fat
  • 1 Tbs. peanut oil
  • Salt and freshly ground pepper, to taste
  • 2 Tbs. peanut oil
  • 1 Tbs. soy sauce
  • Juice of 1 lime
  • 2 tsp. sherry vinegar
  • 1 tsp. peeled and minced fresh ginger
  • 1/8 tsp. sugar
  • 2 or 3 drops Sriracha or other hot sauce
  • 1 lb. fresh Chinese egg noodles
  • 1 red bell pepper, seeded and thinly sliced
  • 1 small red serrano chili, seeded and thinly sliced crosswise (optional)
  • 1/4 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped fresh cilantro
