- 3 leeks, white portion only, halved lengthwise,
- sliced crosswise into 1/4-inch-thick slices and
- rinsed well
- 2 carrots, peeled and cut into 1/4-inch dice
- 1 garlic clove, minced
- Salt and freshly ground pepper, to taste
- 1 cup turkey or chicken stock, plus more as
- needed
- 1 cup milk
- 1 tsp. chopped fresh thyme
- 1 cup chopped green onions, green portion only
