Huevos rancheros with chorizo recipe

INGREDIENTS

• 6 olive oil
• tbsp onion, finely chopped
• 1 garlic cloves, crushed
• 2 dried chillies, finely chopped
• 2 scant tsp smoked paprika
• 1 can chopped tomatoes
• 400 caster sugar
• g chopped flat-leaf parsley
• 0.5 sea salt and freshly ground black pepper
• tsp cooked waxy potatoes, cut into 2cm (3/4in) dice
• 1 spicy chorizo, peeled if necessary, cut into 2cm (3/4in) dice
• tbsp eggs
• 1 chopped coriander
