Lamb sausage kebabs with tzatziki dip recipe

INGREDIENTS

• 1 large courgette
• 4 spring onions, white parts only, cut in half
• 1 salt and freshly ground black pepper
• pinch olive oil
• 2 chopped mint
• tbsp cm length of cucumber, around 150g, quartered lengthways and deseeded
• 4 pot Greek yogurt
• tbsp garlic clove, crushed
• 10 fresh lamb sausages
