- 300 sweet potatoes
- g vegetable oil, for deep-frying
- 1 large red chilli, seeded and finely chopped
- cup garlic cloves, finely chopped
- 1 cm fresh root ginger, grated
- 3 shallots or 2 banana shallots, finely chopped
- 5 small carrot, grated
- 6 sugar
- 1 lime, juice only
- 2 toasted pine nuts
- tsp handful each of mint and coriander leaves, chopped
- 1 each of olive oil and vegetable oil
- 2 sultanas or dates
- tbsp touch olive oil
- 1 small shallots, finely chopped
- tbsp garlic clove, finely chopped
- 2 granulated sugar
- tbsp mirin (Japanese sweet rice wine)
- 1 double cream
