- tbsp balsamic vinegar

- tbsp freshly grated parmesan to sprinkle
- 1 cold butter, cut into 1cm dice
- tbsp plain flour
- 1 sage leaves, finely chopped
- pinch parmesan, finely grated
- 25 salt
