  • 1/2 onion, chopped
  • 1 fennel bulb, cored and sliced thin
  • 2 cups of risotto rice (arborio)
  • 1/2 cup white wine
  • 6 cups vegetable broth
  • 1-2 lbs fava beans
  • 1 cup Parmesan
  • fennel fronds, chopped for garnish
  • 2 heads of radicchio
  • 2-3 tablespoons of olive oil
  • salt and freshly ground pepper to taste
