INGREDIENTS

• 2 tablespoons light brown sugar
• 1 1/2 cups warm water
• 5 tablespoons unsalted butter, melted
• 2 1/2 teaspoons salt
• 2 1/2 cups all purpose flour
• 2 cups whole wheat flour
• vegetable oil, for the bowl
• 10 cups water
• 2/3 cup baking soda
• 1 cup of Pepper Jack cheese, cut into small cubes
• 1 egg yolk
• splash of water
• course sea salt
