  • 3 Persian cucumbers, cut into 1/3 inch half moons
  • 2 stalks celery, cut into 1/3 inch pieces
  • 2 tbsp chopped chives
  • 1 tbsp chopped mint
  • 1/3 cups crumbed Parmesan cheese
  • 1 avocado, removed from skin and diced
  • 2 tbsp olive oil
  • 1 tbsp basil or red wine vinegar
  • 1/2 tsp honey
  • Salt and pepper to taste
