- 1 pound baby yellow potatoes, cut into 1/2 inch cubes
- 1 red bell pepper, cut into 1/2 inch pieces
- 2 cups Brussels Sprouts, ends trimmed and cut into quarters
- 2 ears of corn, kernels cut from the cob
- 2 tablespoons chopped chives
- 4 scallions, greens and whites cut into 1 inch pieces
- 6 strips applewood smoked bacon
- Kosher salt and freshly cracked black pepper to taste
